A native of Alsace-Lorraine, France, Eric Simonis studied at the following institutions and earned the indicated degrees: Ecole Di̩t̩tique de Strasbourg (Brevet de Technicien Sup̩rieur en Di̩t̩tique, 1986), Ecole H̫teli̬re de Strasbourg (Brevet de Technicien H̫telier, 1984 and Certificat D ۪Aptitude Professionnelle Employ̩ de Restaurant, 1984), and Ecole H̫teli̬re de Metz (Brevet D ۪Etude Professionnelle Option Cuisine, 1982 and Certificat D ۪Aptitude Professionnelle Cuisine Classique, 1982). For 12 years, Mr. Simonis served as sommelier at The Bellevue Hotel, then for 10 years he worked as sommelier and general manager of Lacroix at The Rittenhouse Hotel. Today, he is a restaurant manager and dining room instructor at The Restaurant School at Walnut Hill College.
